- 100g flour
- 100g butter (room temperature)
- 1 tsp baking powder
- 80g sugar
- 2 eggs
- 20g cocoa powder
- 4 tbsp liquid / coffee / orange / lemon
- Shift flour, cocoa and baking powder onto bowl.
- Add butter, sugar, egg and liquid. Beat with electric mixer for 2 minutes and stir manually until smooth for another
3 minutes.
- Spoon batter into muffin paper cases.
- Add filling (chocolate / chips / jams / banana / orange peel / mint / nuts) in between batter and add extra for topping.
- Bake in pre-heated oven for 12-20 minutes or until muffins are well risen and the surface springs back lightly when touched
with a finger tip.
- Transfer muffins onto wire tray to cool.
